I always freeze meat in a ziplock bag of marinade to prevent freezer burn. IMHO a good steak doesn’t need much besides a little salt and pepper so a light brine is adequate. A tablespoon of salt per quart is enough. Or red wine…

Just another steak. Needs to be well-marbled. High heat. Don’t cook it too much. I never brine beef.
